I am back on a cupcake kick again. Cupcakes are my weakness.

I love mixing soda into cupcakes. They are a great flavor booster. The cherry cola in this recipe gives the cupcakes a slight cherry flavor while enriching the chocolate.

I do advise when adding the cherry extract to the frosting, combine it slowly. The one tablespoon in the recipe is on the stronger end of the flavor spectrum. Add a little bit at a time to get the right flavor for you.

To finish off your cupcakes, add a fresh cherry to the top!

Ingredients

Cherry Coke Cupcakes

  • 1 box Devil’s Food Cake Mix make sure it has pudding in it
  • 3/4 cup Sour Cream
  • 3/4 cup Vegetable Oil
  • 3 Large Eggs slightly beaten
  • 1/2 cup Cherry Cola
  • 2 teaspoons Cherry Extract

Cherry Buttercream Frosting

  • 2 sticks Unsalted Butter
  • 3-4 cups Powdered Sugar Sifted
  • 1/4 teaspoon Salt
  • 1 tablespoon Cherry Extract
  • 4 tablespoon Milk
  • Food Coloring Gel – optional

Instructions

Cherry Coke Cupcakes

  • In you mixer, mix the cake mix, sour cream, vegetable oil, eggs, soda, and cherry extract until well blended.
  • Line your cupcake pan with cupcake liners.
  • Spoon the mixture into the liners. (almost 3 tablespoon in each liner)
  • Bake in the oven at 350 for about 18-20 minutes.
  • Allow the cupcakes to cool in the pan for about 10 minutes before removing them to cool.
  • Add frosting when fully cooled.

Cherry Buttercream Frosting

  • Beat the butter for a few minutes using your mixer on medium speed.
  • Add 3 cups of powdered sugar and mix on low speed until blended.
  • Add the cherry extract, salt, and 2 tablespoons of milk. Mix on medium speed for 3 minutes.
  • If you need stiffer frosting, add the remaining sugar.
  • If you need a thinner frosting, add the remaining milk.
  • Add your food coloring gel until you get the color desired. (optional)

Notes

Add your Cherry Flavoring to the frosting slowly. It can have a strong cherry flavor, so adjust to your liking.

    I’ve made these a couple times and absolutely love them. One change I made was to add some sour cherry pie filling in the center of the cupcakes. It really takes them over the top!
