This is a great dry rub that my husband uses when he smokes pork. He places the rub on the raw meat the day before he cooks it, wraps it in aluminum foil, and places it in the refrigerator. About an hour before he is ready to smoke it, he then removes the meat from the fridge and injects it with apple juice before he places it in the smoker.
The meat always turns out very flavorful and juicy, creating perfect BBQ pork sandwiches for our guests.
