Pink Peppermint Christmas Cookies

This year, a few of my blogging friends and I decided to have a cookie swap. I usually make sugar cookies for Christmas and thought about making them as my cookies to give to my fellow blogger.

However, I looked through some cookbooks and decided to try a new recipe.

I found a recipe in a Taste of Home The Best of Country Cooking 2010 book. The new recipe was going great until it came to the chocolate sauce. That is where I had to change things. I got out my new best friend, the Ghirardelli Dark Chocolate Melting Wafers. The melting wafers really changed the cookies. To me, the cookies taste a lot like the Girl Scout Thin Mint Cookies. Yum!

Pink Peppermint Christmas Cookies

Ingredients

  • 3/4 cup Butter
  • 1/2 cup Sugar
  • 1 Egg
  • 10-12 drops Red Food Coloring
  • 3/4 teaspoon Peppermint Extract
  • 1 3/4 cup Flour
  • 1/2 teaspoon aking Soda
  • 1/4 teaspoon Cream of Tartar
  • 1/4 teaspoon salt
  • Ghirardelli Dark Chocolate Melting Wafers

Instructions

  • In a large bowl, cream the butter and the sugar.
  • Beat in the egg, food coloring and peppermint extract.
  • In another bowl, combine the flour, baking soda, cram of tartar and salt.
  • Add the flour mixture to the large bowl.
  • Shape the batter into a ball and chill for 2 hours.
  • Once chilled, form the batter into 3/4 inch balls and place them on a cookie sheet.
  • Take a drinking glass and flatten the balls into circles.
  • Bake at 375 for 5-7 minutes.
  • Once the cookies have cooled, melt your chocolate wafers. Use a spatula and spread a layer of chocolate on the bottom of the cookies. Place the cookies on their tops while the chocolate hardens.
  • Once the bottoms have harden, turn them over to decorate the tops with a Christmas designs. Make sure to use piping bag with a small tip.

  1. Now that you’ve mastered the sister to the ever so popular Thin Mint, your popularity is going to grow massively. The world loves Thin Mints. Oh how I wish I could taste these.

    1. I didn’t know what to expect with this new recipe. I was excited with how they turned out. Now I don’t have to wish for the Girl Scouts to come by and sell me some cookies. :)
