Apple Pear Mini Muffins

Del Monte fruit cups are a staple out our house. Our daughter likes to snack during the day as she gets hungry and these have been a life saver for us. We serve them at meals alongside out main dish, eat them as snacks, and occasionally incorporate them into other recipes we make.

Del Monte has recently came out with two new flavors that are perfect for the fall and winter seasons: Diced Apples & Pears with Caramel Flavor and Diced Pears with Vanilla & Spice. I had the opportunity to try these new flavors out and wow, are they delicious. Please check out my Google + album which includes photos of my shopping trip to Walmart to purchase them. They are a great snack, at only 60 calories per serving, are gluten-free, and do not include high-fructose corn syrup.

I love how the syrup in these is not overpowering and accentuates the flavor rather than being a thick liquid. The focus here is on the fruit, which is phenomenal. I decided to add some of the fruit to my standard Muffin In a Cup Recipe and made a few tweaks. I made these in my mini-muffin tin and ended up baking them for about 20 minutes or so.

Muffins

This recipe uses light yogurt and also no oil, so I like to think that it is a little bit better for you than the standard muffin recipe. As always, feel free to tweak the recipe to conform to your dietary standards. Since the fruit is gluten-free, this recipe can be tweaked to also make gluten-free muffins.

Apple Pear Mini Muffins

Ingredients

  • 1 Cup Flour
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 2 1/2 Tbsp Sugar
  • 1 Container Light Yogurt
  • 1 Egg
  • 1/4 Tsp Vanilla Extract
  • 1 Container Del Monte Fruit Cup Drained
  • Dash of Salt

Instructions

  • Preheat oven to 375 degrees Farenheit.
  • Mix all of the above ingredients together in a medium bowl.
  • Fill muffin cups approximately 3/4 of the way full.
  • Bake for 20 minutes.
  • As an alternative, you can also divide the batter between 2 coffee mugs and microwave for 3 minutes to have Muffins in a Cup.
