Sunday Pot Roast

I think one of the most “under utilized” appliances in our kitchen is the slow cooker — or as some of us fondly remember, a crock pot.
They have come a long way baby!! So have the recipes.
This pot roast is one of our family favorites and is so easy and simple that it is almost embarrassing to share…but I will.
Ingredients & Preparation
- 3-4 lb Beef Roast or Chuck Roast
- 2 ans Cream of Mushroom Soup
- 1 envelope Dry Soup Mix
- 1 envelope Dry Brown Gravy
- 1 can Coca-Cola (not diet!)
Mix all ingredients together in a small bowl and pour on top of roast.
Add
- 4 Peeled and Cut Potatoes (or you can use Un-peeled New Potatoes)
- 3-4 Stalks Chopped Celery
- 3-4 Chopped Carrots
Cover and cook on high 6 hours stirring once or twice.
That’s it! This makes a delicious gravy and easily feeds 6-8.
Serve with hot rolls or bread and salad and you have a simple and “heart warming” meal. The best part about this meal is that your family feels special, company thinks you slaved all day, and only you know that this takes about 15 minutes prep time.
This recipe is so flexible that you can feel free to play with it and add different vegetables, or even use canned or frozen. (just to remember to add them last hour of cooking) I have even added canned tomatoes.
Any left overs? I cut the meat in cubes and freeze and I have a hearty stew to serve another day or add canned tomatoes and serve over rice.
