Vidalia Onion Casserole

Onions seem to be a food that people either love or hate. At our household, we absolutely love onions and try to incorporate them into our meals any way we can. In the springtime, when the fresh, sweet Vidalia onions become available, we always snag a few to make this wonderful Vidalia Onion Casserole.
Ingredients
- 4 cups sliced Vidalia Onions
- 1/2 cup Butter
- 1 can Cream of Mushroom Soup
- 1/2 cup Sour Cream
- 1-1/4 cup Cornbread Stuffing Mix
Preparation
Preheat your over to 350 degrees Fahrenheit. Start by melting your butter in a medium saucepan. Add onions to your butter and cook until the onions become translucent and limp. Continue to add the cream of mushroom soup, sour cream, and cornbread stuffing mix. Once all ingredients are mixed together, scoop the mixture into a casserole dish. Top with extra stuffing mix and insert into the oven until it is hot enough that it bubbles (approximately 20 minutes).
This is a wonderful dish to serve alongside your favorite grilled steak or would compliment an Easter turkey dinner.
Sounds tasty – Is it really onion-y though because my husband is not a fan of onions (How can one not love onions, right?!)
I think it is oniony which is why I think I like it so much. He probably wouldn’t be a fan if he doesn’t like them. But that leaves more for you, right?! I also must say this makes phenomenal left-overs!
Cornbread stuffing mix? I’m not even sure what that is. I can’t even imagine what it would look like. Otherwise it sounds good. I love onions now as long as they are cooked. I used to hate them.
I said the same thing about the stuffing mix. I didn’t know it came in a cornbread variety until I tasted this recipe. It turns out amazing though! If I make it sometime soon I will try to snap a pic of it for the blog.
