Muffins in a Cup

I love eating breakfast, but often don’t love the time that it takes to put it together and clean it up. Since I’ve become a mom, my mornings are like one big whirlwind of activities. I used to be able to slowly get out of bed, stretch, prepare coffee and then take my time fixing something for when I felt like eating. Now, that is a much different story. I feel like I jump out of bed, change diapers, and get milk and breakfast prepared for my toddler (who is sure to let me know if I am taking too long). Then, in-between serving everyone else, I get to make my own coffee and try to wake up a little bit.

So, when I saw this recipe for 3-minute muffins in a cup, I knew I had to try it.

The best part of this recipe is that I already had all of the ingredients in my house.

Ingredients

  • 1/2 c Flour
  • 1 tsp Baking Powder
  • 2 1//2 Tbsp Sugar
  • Sprinkle of Salt
  • 1 Egg
  • 2 Tbsp Vegetable Oil
  • 2 Tbsp Milk
  • Small dash of Vanilla
  • Container of Vanilla Yogurt (the small containers that you eat in one sitting)
  • Fruit of your choice (I used a container of the Del Monte Blueberries and drained off the water)

Preparation

Step 1:  Mix all ingredients together and fold in fruit.

Yummy goodness, right? It pretty much took all I had not to eat the batter out of the bowl.

Step 2:  Pour into coffee cups. I have HUGE coffee cups because I take my coffee very seriously. This recipe will yield 3 muffins, however, with my mugs, it made 2. Be sure to adjust for however many you are serving.

Step 3:  Put in the microwave for 3 minutes.

Yep, I said microwave. That is why I love this recipe.

Here is what you will get:

Be sure to take a toothpick and stick down the center to make sure it is done. If there is batter left on the toothpick when you pull it out, put it back into the microwave for another 30 seconds to a minute.

Top the muffin off by sprinkling it with brown sugar, or adding some whipped cream and more fruit!

I forgot to take a picture of this part. Mostly because it was down the hatch before I could!

This muffin turned out super fluffy, moist and delicious! When I presented this to my family, they looked at me as if I were crazy – as they often do when I cook something new. However, after eating, my husband told me that it was great and that he would love it if I would make it again. Success!

  6. Hey, I tried this out. The muffins didn`t look pretty, they were uneven, but they were delicious! I put in some cocoa to make them chocolate flavoured, and it tasted good. :)
