Bacon Wrapped Water Chestnuts

I came upon this wonderful recipe while at a friend’s house this winter. I have to admit, I’ve never made anything with water chestnuts. To me, they just don’t have much of a taste, so I didn’t see the need for them. Sure, I’ve had them in salads and pastas, but other than a crunch, I didn’t think they really had much to offer.
That is, until you wrap them with bacon.
These cook up fast for a great appetizer while you are hanging out with your family, or having some friends over. They have quickly become a favorite at our house to make for “game time.”
Ingredients
- Water Chestnuts
- Soy Sauce
- Bacon
Preparation
I started in the morning by opening the can of water chestnuts and putting them in a bowl. I then doused them with soy sauce, covered them and let them sit in the refrigerator for about 4 hours so the soy sauce could really soak in. You can use low-sodium soy sauce if you want to make them a little less salty-tasting.
Since I purchased whole chestnuts, I cut each of them in 4 pieces. I then took out my bacon and cut each strip into 3 pieces. I wrapped one chunk of the water chestnut in the bacon and pierced it with a toothpick to hold it together.
Don’t these just look delicious!
Once they were all wrapped up and ready to go, I put them in a 350-degree oven and followed the instructions for cooking the bacon. I won’t list a specific time here, because there is some debate about how long to cook the bacon before it is perfect. Some people like their bacon a bit chewy, where others like it crispy. Personally, I like to cook it where it is a bit crispy.
