Ingredients

  • 15 oz. Black Beans drained
  • 15 oz Sweet Corn drained
  • 1/4 cup red onion chopped
  • 2 cloves garlic minced (or I used 2 tsp of freeze-dried garlic cloves)
  • 2 jalapeños chopped with seeds and stems removed
  • 1/4 cup red peppers chopped with seeds and stems removed
  • 1/4 cup cilantro chopped
  • 1/2 tsp ground cumin
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and cayenne to taste

Instructions

  • In a large bowl, mix the black beans, corn, garlic, jalapeños, red peppers, cilantro, and cumin.
  • Add in the olive oil and lime juice, mix well.
  • Mix in salt and cayenne to your taste preference.
  • Chill for at least 30 minutes before serving.
