
This past week we were blessed with a box of mangos from the National Mango Board. I was so excited to be able to cook with mangos because that is a fruit I don’t use very often. They are delicious!
The mangos were accompanied by a cookbook that contains some amazing mango recipes. I like to eat my fruit in the morning, so I opted for the mango waffles this morning and used this delicious mix of mangos and raisins to top my waffle instead of my usual sugary syrup.
I’ve been on a huge health kick lately. Losing 30 pounds has really inspired me to enjoy my fruits and veggies more!
Did you know that a cup of mangos only contains 100 calories? Not only that but they are rich in Vitamins A, C, and are a good source of dietary fiber.
I made a quick video of the process of us making the waffles for you to enjoy below. A few years back I bought my husband a professional waffle maker. We’re pretty serious about waffle-time.
