Silk Fruit&Protein Strawberry Banana Cupcakes #SilkFruit #cBias

When it comes to breakfast, my family looks for a nice, nutritious way to start our day. When I worked outside the home, breakfast was very neglected. I barely had enough time to get myself out the door, let alone eat something nutritious. Now that I am home, I try to make sure that everyone is fed when they get up so that we will have energy to get through the day.

The Silk brand has been a brand that I have purchased since I was in High School. I was very lactose intolerant and couldn’t handle milk, so my mom would purchase the Vanilla Silk Soy Milk for me to add to my cereal. I love the way that it tastes and have used it in many recipes over the years.

When I heard about the Silk Fruit&Protein I was eager to give it a try. This is such a refreshing juice drink that is also very filling. It is a great source of calcium, protein and Vitamin D. The drink itself is very smooth and has a great strawberry taste. To get more healthy this year I have been eating and drinking more at home and think that this would be a perfect addition to drink mid-morning when my belly starts rumbling.

My family indicated that they wanted something sweet yesterday and hinted that cupcakes would be perfect. I often carry 3-5 boxes of cake mix at a time, because I buy them on sale and use them for cupcakes. But, I realized that I didn’t pick up any eggs at the store! So… I replaced the eggs and water with 2 1/2 cups of the Silk Fruit&Protein and the cupcakes turned out quite nice!

The cupcakes were very moist. I used a vanilla cake mix and the cupcakes tasted like strawberry banana from the Fruit&Protein drink. They were so yummy!
